Resumen

El mamón (Melicoccusbijuga L), perteneciente a la familia sapindaceae, es un fruto tropical nativo de América tropical, altamente diseminado en Venezuela. El objetivo de este estudio consistió en determinar el contenido de elementos en el fruto (pulpa o porción comestible) de mamón. Los elementos analizados fueron: fósforo (P), potasio (K), calcio (Ca), magnesio (Mg), sodio (Na), hierro (Fe), zinc (Zn), cobre (Cu), manganeso (Mn) y cromo (Cr). Se obtuvieron las siguientes concentraciones: 95,7 mg/100g de P, 180 % mg∙g-1 de K, 32 % mg∙g-1 de Ca, 58,1 % mg∙g-1 de Mg, 4 % mg∙g-1 de Na, 2,7 % mg∙g-1 de Fe, 0,6 % mg∙g-1 de Zn, 0,2 % mg∙g-1 de Cu, el Mn y el Cr no fueron detectados. El contenido de microelementos en la pulpa de mamón hace a este fruto tropical altamente nutritivo y podría ser usado como suplemento alimenticio, convirtiéndolo en un fruto de interés para la explotación comercial e industrial.
